Entre la materia prima que cobra gran interés en la generación de biocombustibles, se encuentran los residuos lignocelulósicos que actualmente se producen en abundantes cantidades, ya sea por simple acción de la naturaleza o porque hacen parte de la cadena agroindustrial de una región dada. Es por ello que en el presente trabajo se evaluó la biomasa de Eucalyptus globulus, como fuente de bajo costo y amplia disponibilidad en la obtención de biocombustible líquido, para lo cual se llevó a cabo una caracterización física y química preliminar teniendo en cuenta especificaciones establecidas en normatividad del sector. Se realizaron ensayos de conversión termoquímica por medio de una pirólisis en atmósfera de N2 y a través de la aplicación de un diseño experimental factorial ( 2 2 ) contemplando la influencia de variables experimentales tales como tiempo de residencia y temperatura, fue posible obtener a 550 ºC y durante 20 min de reacción, un bioaceite con un rendimiento máximo del 45,2 % y cuyas propiedades físicas y químicas se encuentran dentro del rango estimado en literatura para biocombustibles de origen lignocelulósico, tal es el caso del poder calorífico (16,7 MJ/kg). Por lo tanto, la biomasa de Eucalyptus globulus puede ser considerada como materia prima con potencial a ser explorado en la generación de energéticos.<hr/>ABSTRACT Atmospheric pollution and accelerated environmental deterioration for the increasing use of fossil fuels have directed research inthe energy field towards the search for alternative, renewable, efficient and, above all, more environmentally friendly sources. Among the raw materials that are of great interest in the generation of biofuels are lignocellulosic residues, which are currently produced in abundant quantities, either by the simple action of nature or because they are part of the agro-industrial chain of a given region. For this reason in the present work, the biomass of Eucalyptus globulus was evaluated as a low-cost and widely available source for obtaining liquid biofuel, for which a preliminary physical and chemical characterization was carried out, by considering established standard specifications. Thermochemical conversion tests were carried out by pyrolysis in an N2atmosphere and through the application of a factorial experimental design (22) contemplating the influence of experimental variables such as residence time and temperature, it was possible to obtain at 550 ºC and during 20 min of reaction, a bio-oil with a maximum yield of 45,2 % and whose physical and chemical properties are within the range estimated in the literature for biofuels of lignocellulosic origin, such as the calorific value (16,7 MJ/kg). Therefore, the biomass of Eucalyptus globulus can be considered as a raw material with potential to be explored in the generation of energy. <![CDATA[Operating conditions of a bioreactor for coffee fermentation]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100029&lng=pt&nrm=iso&tlng=pt RESUMEN Las fermentaciones con temperatura controlada se proponen como alternativa de procesamiento para obtener beneficios en la calidad del café. Las características físicas cambiantes en la masa de café, durante la fermentación, se convierten en un desafío para que el sistema de agitación logre condiciones homogéneas de temperatura. Con el objetivo de determinar las condiciones de operación de un biorreactor para fermentaciones en café, se realizó un proceso de puesta a punto, en el que se realizaron fermentaciones con variación en la velocidad de rotación, tiempo de agitación y periodo entre agitaciones. Posteriormente se determinó el comportamiento de las fermentaciones en un rango de temperatura entre 10 y 30 ºC, con intervalos de 5 ºC. Como testigo de cada proceso se realizó una fermentación espontánea. Se determinaron los tiempos de degradación de mucílago mayor a 95 % y de equilibrio de temperatura entre la masa y la chaqueta del equipo. Se observaron diferencias en el tiempo de fermentación y los valores finales de pH y temperatura de la masa, respecto al testigo y a la temperatura de control. Los procesos controlados tomaron entre 2 y 13 horas más de fermentación que el testigo correspondiente. Mediante un impulsor de paletas planas, se identificó el mejor punto de operación cuando el proceso se realizó a 3 r•m-1, por 2 min, cada 6 horas. Para lograr una temperatura de fermentación en la masa de café, de acuerdo con sus características, se requiere una agitación a baja velocidad para no generar remoción mecánica de mucílago.<hr/>ABSTRACT Fermentation at a controlled temperature is proposed as a processing alternative to obtain benefits in terms of coffee quality. The changing physical characteristics in the coffee mass during fermentation become a challenge for the stirring system to achieve homogeneous temperature conditions. A fine-tuning process was carried out to determine the operating conditions of a bioreactor for fermentation in coffee with variations in rotation speed, stirring time, and the period between stirrings. Subsequently, the behavior of the fermentations was determined in a temperature range between 10 and 30 °C, at intervals of 5 °C. As a comparison for each process, spontaneous fermentation was carried out. The time to reach mucilage degradation greater than 95 % and the time to reach equilibrium between the temperatures of the coffee mass and the equipment’s water jacket were determined. The final pH was also registered. Descriptive differences observed between the processes with controlled temperature, the spontaneous fermentation in the time to reach mucilage degradation, and the final pH and temperature values. The controlled processes required between 2 and 13 hours longer fermentations than the corresponding spontaneous process. Through a flat vane impeller, the best operating point was identified when the process was performed at 3 r•min-1 for 2 min every 6 hours. Low-speed agitation is required to reduce mechanical removal of mucilage. <![CDATA[Aqueous extract of <em>Pseudoelephantopus spicatus</em> regulates blood glucose levels]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100040&lng=pt&nrm=iso&tlng=pt RESUMEN En la actualidad, el campo de la fitofarmacología ha demostrado el potencial antidiabético de distintas plantas tradicionales, entre las que se encuentra el Pseudoelephantopus spicatus (amargón) sin embargo, los estudios que demuestran el efecto hipoglucemiante de esta planta son poco conocidos. Por ello, en el presente estudio se evaluó su efecto regulador de la glicemia en un modelo de rata Wistar. Los experimentos se realizaron como prueba piloto y se validaron en una cinética de 0, 1, 2, 6 y 24 horas mediante cinco grupos experimentales (control, diabéticos inducidos con alloxan, diabéticos tratados con metformina y diabéticos tratados con extracto de P. spicatus con dosis de 250 y 500 mg/kg). Los tratamientos se aplicaron durante 1, 5 y 21 días y los datos obtenidos se validaron por ANOVA/Neuman-Keuls (p&lt; 0,05) usando el paquete estadístico GraphPad Prism V.5. Los resultados demostraron que el alloxan a 120 mg/kg indujo la diabetes mellitus en el 100 % de las ratas. El extracto a 250 y 500 mg/kg logró una reducción significativa de los niveles de glucosa en sangre en comparación con las ratas diabéticas p&lt; 0,05, sin mostrar diferencias significativas entre las dosis. La reducción de los niveles de glucosa en sangre provocada por la metformina a 500 mg/kg y las distintas dosis del extracto no mostraron diferencias significativas. Según los resultados del estudio, el extracto de P. spicatus induce un efecto hipoglucémico en las ratas.<hr/>ABSTRACT Currently, the field of phytopharmacology has demonstrated the antidiabetic potential of several traditional plants, including Pseudoelephantopus spicatus (amargon); however, studies demonstrating the hypoglycemic effect of this plant are little known. Therefore, in the present study, its glycemia-regulating effect was evaluated in a Wistar rat model. The experiments were performed as a pilot test and were validated in a kinetic of 0, 1, 1, 2, 6 and 24 hours using five experimental groups (control, diabetics induced with alloxan, diabetics treated with metformin and diabetics treated with P. spicatus extract with doses of 250 and 500 mg/kg). The treatments were applied for 1, 5 and 21 days and the data obtained were validated by ANOVA/Neuman-Keuls (p&lt; 0.05) using the GraphPad Prism V.5. statistical package. The results showed that alloxan at 120 mg/kg induced diabetes mellitus in 100 % of the rats. The extract at 250 and 500 mg/kg achieved a significant reduction in blood glucose levels compared to diabetic rats, showing no significant difference between doses. The reduction in blood glucose levels caused by metformin at 500 mg/kg p&lt; 0,05, and the different doses of the extract showed no significant differences. According to the results of the study, the extract of P. spicatus induces a hypoglycemic effect in rats. <![CDATA[Sensory evaluation of coffee from Nariño (Colombia) enriched mycelial biomass of <em>Ganoderma lucidum</em>]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100053&lng=pt&nrm=iso&tlng=pt RESUMEN Colombia es el tercer productor mundial de café y es reconocido como un producto de calidad superior. En Nariño es la actividad agropecuaria más representativa, pero con baja sofisticación en los procesos de transformación. El objetivo de este estudio fue desarrollar un café de origen nariñense que posea la aceptabilidad y funcionalidad de Ganoderma lucidum. Se determinó el contenido de polifenoles totales mediante el método Folin-Ciocalteu, actividad antioxidante por el método DPPH y evaluación de grupos funcionales estructurales mediante espectroscopía infrarroja por transformada de Fourier (FTIR) para el cuerpo fructífero y biomasa micelial de G. lucidum. El contenido de polifenoles totales y actividad antioxidante fue mayor en la biomasa micelial (41,67 ± 4,35 mg EAG/g y 6,49 ± 0,99 µmol Eq Trolox/g extracto) en comparación con el cuerpo fructífero (14,31 ± 1,85 mg EAG/g y 4,80 ± 0,25 µmol Eq Trolox/g extracto). Los espectros IR del cuerpo frutífero y biomasa micelial mostraron similitud en ambos espectros, entre los picos, las bandas anchas y fuertes, lo que indico que su composición química es similar pero más no en concentración. En el desarrollo del café se adicionó biomasa micelial de G. lucidum en tres concentraciones (6, 8 y 10 %) y se evaluó el perfil sensorial de taza atendiendo parte de los protocolos de catación de la SCAA. Los resultados del análisis sensorial las muestras con 8 y 10 % de biomasa micelial en café resultaron en el incremento de sus puntajes alcanzando casi los puntajes de la muestra control, y estos se mantuvieron relativamente constantes en los 8 y 9 puntos, manteniendo al café enriquecido dentro del rango de la SCAA como un café excelente y extraordinario respectivamente, lo que demuestra un método prometedor de aplicación directa de biomasa micelial en los alimentos para el desarrollo de alimentos funcionales.<hr/>ABSTRACT Colombia is the third largest coffee producer in the world and is recognized for its superior quality product. Nariño, it is the most representative agricultural activity but with low sophistication in the transformation processes. The objective of this study was to develop a coffee of Nariño origin that possesses the acceptability and functionality of Ganoderma lucidum. The total polyphenol content was determined using the Folin-Ciocalteu method, antioxidant activity using the DPPH method, and evaluation of structural functional groups using Fourier-transform infrared spectroscopy (FTIR) for the fruiting body and mycelial biomass of G. lucidum. The total polyphenol content and antioxidant activity were higher in the mycelial biomass (41,67 ± 4,35 mg EAG/g and 6,49 ± 0,99 µmol Eq Trolox/g extract) compared to the fruiting body (14,31 ± 1,85 mg EAG/g and 4,80 ± 0,25 µmol Eq Trolox/g extract). The IR spectra of the fruiting body and mycelial biomass showed similarity in both spectra, among the peaks, broad and strong bands, indicating that their chemical composition is similar, but not in concentration. In the development of coffee, mycelial biomass of G. lucidum was added in three concentrations (6, 8 and 10 %), and the sensory profile of the cup was evaluated following some of the cupping protocols of the SCAA (Specialty Coffee Association of America). The results of the sensory analysis for the samples with 8 and 10 % mycelial biomass in coffee showed an increase in their scores, reaching nearly the scores of the control sample, and these scores remained relatively constant at 8 and 9 points, placing the enriched coffee within the SCAA range as an excellent and extraordinary coffee, respectively. This demonstrates a promising method for the direct application of mycelial biomass in food for the development of functional foods. <![CDATA[Evaluation of the lignocellulolytic activity of fungi grown on oil palm byproducts (<em>Elaeis guineensis</em>)]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100070&lng=pt&nrm=iso&tlng=pt RESUMEN En la cadena de producción de aceite de palma se generan grandes cantidades de subproductos con alto contenido lignocelulolítico, representando un importante recurso renovable neutral en carbono para la producción de biomateriales, sin embargo, se requiere un método de pretratamiento para superar las barreras físicas y químicas presentes en el compuesto de lignina-carbohidrato. El objetivo de esta investigación fue aislar e identificar hongos lignocelulolíticos con capacidad biodegradadora de subproductos de palma de aceite, derivados de la explotación palmera en el departamento del Cesar, Colombia. Los hongos fueron aislados en agar papa dextrosa e identificados según sus características macroscópicas y microscópicas. Se evaluó la actividad lacasa (Oxidación ABTS) y endoglucanasa (CMCasa) durante 13 días por fermentación de estado sólido de 3 subproductos: torta de palmiste, cuesco y fibra. Los subproductos biodegradados se analizaron mediante microscopía electrónica de barrido (SEM). Se cuantificaron 12 aislamientos agrupados en 2 géneros, Aspergillus sp y Trichoderma sp. Además, del hongo Pleurotus ostreatus, adquirido comercialmente. La actividad endoglucanasa más alta (0,12 UI/mL) en las condiciones estudiadas, no evidenciaron significancia estadística para cada una de los hongos evaluados (p&gt;0,05), a diferencia de la actividad lacasa (203,33 UI/g) (p&lt;0,05). Los hongos aislados poseen el potencial para mejorar la biodegradabilidad de los subproductos de la palma de aceite, enfocado como estrategia ecológica y sustentable.<hr/>ABSTRACT In the production chain of palm oil, large amounts of lignocellulosic subproducts are generated, representing an important neutral carbon renewable resource for the production of biomaterials, however, a pre-treatment method is required to overcome the physical and chemical barriers present in the lignin-carbohydrate compound. The objective of this research was to isolate and identify lignocellulolytic fungi capable of biodegrading palm oil subproducts, derived from palm exploitation in the Cesar department, Colombia. The fungi were isolated on potato dextrose agar and identified based on their macroscopic and microscopic characteristics. The laccase activity (ABTS oxidation) and endoglucanase activity (CMCase) were evaluated during 13 days through solid-state fermentation of three subproducts: palm kernel cake, palm kernel shell, and fiber. The biodegraded subproducts were analyzed using scanning electron microscopy (SEM). A total of 12 isolates were quantified and grouped into 2 genera, Aspergillus sp and Trichoderma sp. Additionally, the commercially acquired Pleurotus ostreatus fungus was also used in the study. The highest endoglucanase activity (0,12 IU/mL) under the studied conditions did not show statistical significance for each of the evaluated fungi (p&gt;0.05), in contrast to the laccase activity (203,33 IU/g) (p&lt;0,05). The isolated fungi have the potential to improve the biodegradability of palm oil subproducts, with a focus on an ecological and sustainable strategy. <![CDATA[Butanol production draw from lignocellulosic residues under the biorefinery approach: Bibliometrical analysis]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100087&lng=pt&nrm=iso&tlng=pt ABSTRACT With a world market that is around 4,2 (1012) US$/year (3 Mton/year) and a growing projection of use, butanol is a compound that has more advantages as biofuel, than ethanol. Using the strategy of bibliometric analysis, this work looks to generate an integral vision of the determining research aspects concerning butanol through the combination of different keywords related to it. The databases used for the study, where those available in Scopus and Web of Science platforms, related to butanol in the VOSViewer during the period 1984-2020 and the first semester of 2021. It was also found that butanol production from lignocellulosic material does not yet show good yields and process intensification for an economically and environmentally acceptable biorefinery concept. Deficiencies in fermentation are a bottleneck, due to the lack of microorganisms that are more productive and tolerant to high butanol concentrations.<hr/>RESUMEN El butanol, es un compuesto que tiene más ventajas como biocombustible que el etanol, con un mercado mundial que está alrededor de 4,2 (1012) US$/año (3 Mton/año), y una proyección de uso cada vez más creciente. Por esta razón, en el presente trabajo, bajo la estrategia de un análisis bibliométrico, se combinaron diferentes palabras claves relacionadas con el butanol, para generar una visión integral de los aspectos investigativos determinantes. Las bases de datos utilizadas, fueron las disponibles en las plataformas de Scopus y Web of Science, relacionada con el butanol en el VOSViewer durante el periodo 1984 a 2020 y el primer semestre de 2021. Se encontró que la producción de butanol a partir de material lignocelulósico, no muestra aún buenos rendimientos e intensificación de procesos, para un concepto de biorrefinería económica y ambientalmente aceptable. Un cuello de botella, son las deficiencias en la fermentación, por la falta de microorganismos más productores y tolerantes a altas concentraciones de butanol. <![CDATA[Importance of probiotic encapsulation: ionic gelation and complex coacervation as promising techniques for food use]]> http://www.scielo.org.co/scielo.php?script=sci_arttext&pid=S1692-35612024000100105&lng=pt&nrm=iso&tlng=pt RESUMEN La microflora intestinal cuenta con microorganismos vivos que promueven el bienestar y la salud del intestino y de manera indirecta de diferentes sistemas del cuerpo. Cuando se suministran microorganismos probióticos en dosis correcta y de manera adecuada, estos contribuyen a la disminución de adquirir ciertas enfermedades; los probióticos cuentan con numerosas propiedades que inciden sobre la microflora del organismo resultando beneficiosos principalmente en la salud intestinal y en el sistema inmunológico, que pueden ser suministrados por productos nutraceúticos o por alimentos funcionales. Sin embargo, existen limitaciones en su uso debido a que son sensibles bajo condiciones adversas del entorno, se degradan en matrices alimentarias en condiciones ácidas del tracto gastrointestinal, lugar donde deben ejercer su mecanismo de acción para generar los efectos benéficos en la salud del hospedero. Por lo tanto, es importante la implementación de estrategias que brinden protección a los probióticos frente a condiciones no favorables, para mantener significativamente la viabilidad durante el procesamiento y en el sistema digestivo. Existen diversas técnicas de encapsulación, entre ellas la gelificación iónica y la coacervación compleja, ambos métodos con grandes bondades para la protección de microorganismos probióticos y amplias ventajas para la aplicación en diferentes matrices alimentarias; estas técnicas, se realizan con materiales no tóxicos, naturales y aprobados para el consumo humano. La presente revisión tiene por objetivo presentar aspectos importantes sobre los microorganismos probióticos en la industria de alimentos, en la salud, y la necesidad de las barreras de protección con enfoque principalmente en el método de gelificación iónica y coacervación compleja como técnicas emergentes de encapsulación.<hr/>ABSTRACT The intestinal microflora has living microorganisms that promote the well-being and health of the intestine and indirectly of different systems of the body. When probiotic microorganisms are supplied in the correct dose and in an adequate manner, they contribute to the reduction of acquiring certain diseases; Probiotics have numerous properties that affect the microflora of the body, resulting in benefits mainly for intestinal health and the immune system, which can be supplied by nutraceutical products or functional foods. However, there are limitations in their use because they are sensitive under adverse environmental conditions, they degrade in food matrices under acidic conditions of the gastrointestinal tract, where they must exert their mechanism of action to generate beneficial effects on the health of the host. Therefore, it is important to implement strategies that provide protection to probiotics against unfavorable conditions, to significantly maintain viability during processing and in the digestive system. There are various encapsulation techniques, including ionic gelation and complex coacervation, both methods with great benefits for the protection of probiotic microorganisms and broad advantages for application in different food matrices; These techniques are made with non-toxic, natural materials approved for human consumption. This review aims to present important aspects of probiotic microorganisms in the food industry and the need for protective barriers, focusing mainly on encapsulation techniques by ionic gelation and complex coacervation.
