Introduction.

This paper contributes to the identification of environmental impacts derived from coffee production and to the sustainable use of the waste generated, in La Morena village of the municipality of La Plata - Huila Colombia.

Objective.

Analyzing the practices of the production process in the coffee community and identifying methods for the sustainable use of waste generated by the pulp.

Materials and methods.

This study was carried out through a combination of methodologies focused on an explicit research, specifying the methods of the implementation of the crop, systems for the process of coffee to obtain the coffee beans, and the use of the waste obtained in the pulping process. Among the information gathering techniques, two focus groups were carried out, semi-structured interviews with producers from the village, and organizations such as the Cadefihuila Committee, the Municipality Coffee Growers Committee, the different coffee traders, the Municipality's Rural Development Unit (UDR, by its acronym in Spanish), Occicafé, and sustainable coffee growers from the Municipality.

Results.

Twenty (29) farms were identified in the sector, taking into account 12 farms that were in production, identifying aspects such as the implementation of the crop, coffee processing methods for obtaining the almond, and the use of the residues obtained in the pulping processes.

Conclusions.

Acknowledging that the coffee cultivation processes has a high impact in the local context because it permanently reduces the possibility of recovering the water sources that are highly contaminated with pulp, mucilage and boiled water wastes, thus, it is important that the coffee grower knows the advantage of implementing sustainable development practices through agro-ecosystems.
