Abstract

The article presented below presents the aim of identifying the main factors of innovation exhibited in the specialized literature in the food industry. For its development, a bibliometric exercise aimed at analyzing scientific articles in the field was conducted. From the results, it is concluded that the main factors for innovation in the food industry channels of communication and participation are associated in the production process of customers, suppliers or public or private institutions (universities or centers Research). According to the links created among stakeholders, exchange of knowledge and information is generated related mainly to the quality of life, nutrition and production efficiency, thus impacting product development, changes to the existing offer or processing production processes. In this perspective, innovation in the industry subscribes to the ''Open Innovation'' where the ''Co-innovation'' and ''Co-creation'' are key terms of trade, and participation of stakeholders.
