Environmental quality is very important for people's lives and in this context, organizations providing perishable goods, known as food markets, need sanitation indicators to properly manage organic waste. That is why this study has as its main objective, through a literature review in the databases Scopus, Latindex, Dialnet, Redalyc and Google Scholar, to contribute to the investigation of the levels of contamination of solid waste generated in food supply centers in Peru to advance new knowledge that can provide efficient means and improve the communication of the message to the public. In conclusion, solid waste management in Peru's open markets presents significant challenges in terms of collection, disposal, and separation of waste at source. To address these challenges, joint efforts between government, vendors and civil society are needed to improve infrastructure and collection systems, promote proper waste separation at source, and foster environmental education and awareness.
