Abstract

The popping bean is a crop that besides having a high content of proteins and carbohydrates can be used in the industry and can be consumed as a snack food. The objective of this research was to quantify some antinutritional factors and agronomic characteristics of 20 materials of popping beans; with the purpose of identifying agreements with desirable characteristic of quality. The results demonstrate the presence of two groups which are clearly discriminated by the variables number of pods by plant, percentage of volume increment in the grain after having popped, days passed until 50% and 100% to flower and concentration of tannins in the seed.
