The objective of the research is to design a tool guide, based on continuous improvement techniques, applicable to small and medium enterprises (SMEs) in the dairy sector in Latin America and the Caribbean (LAC). Through a literary review of 758 SMEs in 10 LAC countries, the main factors that influence the organizational and productive development of dairy SMEs are analyzed. Subsequently, a semi-structured interview was designed for 6 dairy SMEs in Veracruz, Mexico and 6 dairy SMEs in Bogotá, Colombia. The results show deficiencies in aspects such as: structure and organizational development, production planning, relationship with suppliers and customers. Therefore, the design of the tool guide integrates continuous improvement techniques and indicators that allow for dairy SMEs to manage and control their processes in a clear, simple way, and encourages the evaluation of their performance.
