Abstract

The objective of the research was to determine the chemical compositional characteristics of raw bovine milk in the Anaime Canyon of the Cajamarca municipality, the Tolima Department. 216 samples were analyzed, from 27 farms, classified in a cluster (C), C1 small farmers, C2 medium farmers, and C3 large farmers. The variables were: Fat, protein, total solids (TS), lactose, and urea nitrogen in milk (UNM) ISO method. Protein values were (p ≤ 0.05) for C1 (3.34%), C2 (3.52%) and C3 (3.13%). For total solids (TS) (p ≤ 0.05) C3 (11.81%). In Lactose a (p ≤ 0.05) for C1 (4.44%). For urea nitrogen in milk (UNM), it presented (p ≤ 0.05) in the three clusters. And in Fat (p > 0.05) for the three clusters. It can be concluded that the chemical compositional quality values are under the minimum established by Colombian law.
