Abstract

THIS ESSAY IS ABOUT THE FUTURE OF TRADITIONAL AFRO-COLOMBIAN FOODS OF THE PACIFIC COAST, in the context of the country's "ethnoboom". It defines this phenomenon in terms of the hyper-exaltation and over-simplification of symbolic patrimonies belonging to ethnic people, resulting in cultural cannibalization, while -at the same time, paradoxically- their ancestral territories are being violently occupied by rightist ilegal armed groups. Considering the ethical implications of this juncture, it relies on the knowledge of two pioneers of the anthropology of food, Esther Sánchez and Ramiro Delgado, who coincide in that part of the answer lies on pedagogical initiatives that stress the relationship between a peoples´ food and its agricultural, aesthetic and symbolic systems, a point of view shared by various gastronomic dissidents, who also disagree with industrialized monocropping.
