The ant Atta laevigata, dwells in the departments of Santander and Casanare in Colombia where they are used as food by the people, attributing aphrodisiac properties. We evaluated current methods of collection, processed and materials used in the production of ant toast, and according to the deficiencies found were proposed effective methods and new processes to make better use of this resource. The proposed technology for producing toast ant and increased production of flour yield, protein concentration and storage time
