In Mexico, food markets are part of the culinary, social, cultural, and economic tradition of the territory. However, these markets have been institutionally weakened in recent times, risking the food heritage they represent. Therefore, this research aims to analyze a governance arrangement, seen as formal and informal linkages between social actors for the management of territorial resources and visible through collective organizational structures as food markets, to identify how these governance arrangements influence the conservation of food heritage. The "Mercado el 100" case study in Mexico City was enriched with a survey applied to ten market key actors. It is rescued that this market has great relevance for the conservation of food heritage, especially in terms of: generating a sense of embeddedness and identity among the actors; reproducing food traditions; strengthening family farming and agroecological practices; influencing the promotion of gastronomic heritage, educational and tourist activities. The organization, as a formal action and institution continues to emerge as a success route when seeking to coordinate collective actions and the governance of territorial resources for the conservation of food heritage.

Research article that analyzes food markets, as forms of materialization of governance arrangements between social actors for the collective management of territorial resources, and the effects that these markets may have on the conservation of food cultural heritage, material, and intangible components as well.
