In the cold tropical climates of Boyacá (Ricaurte, Sugamuxi Tundama, Valderrama and Norte), grapes are cultivated for winemaking. In various studies, it has been shown that pruning plants is one of the practices that affect the quality and productivity of crops. We sought to evaluate the effect of three types of pruning (long, short and mixed) on the production of 'Cabernet Sauvignon' for winemaking in Sutamarchán (Boyacá). During harvest, total production was established per plant, and variables of growth and production were observed for the fruit, as well as the alcohol and mineral content of the berries in a quality laboratory. Results showed that long pruning had the highest number of clusters/plant, fresh weight and yield of the clusters with the highest contents of total soluble solids (21.91 °Brix), the lowest tritratable acidity (6.4 g L-1) and the highest contents of Ca, Mg and K. Mixed and long pruning generated appropriate concentrations of probable alcohol degrees (12.73% and 12.65%) respectively, presenting options for the production of quality grapes for winemaking.
