RESTREPO, Jaime; ARIAS, Natalia  e  MADRINAN, Cecilia. Determination of the Nutritional Value, Fatty Acid Prof le and Antioxidant Capacity of Aguaje Pulp (MauritiafFlexuosa). rev. cienc. [online]. 2016, vol.20, n.1, pp.71-78. ISSN 0121-1935.

In the present study, the moriche or aguaje pulp (Mauritiaflfexuosa L.f.), native palm of the Amazon region- was characterized, evaluating their bioactive compounds and antioxidant capacity. We analyzed the moisture content, ash, fat, crude f ber, proteins and reducing sugars, to establish the nutritional value of the aguaje pulp; the fatty acid content of the oil extract by gas chromatographymass spectrometry (GC-MS); and the radical scavenging capacity of carotenoids extracts, with the 2,2-diphenyl-1-picryl-hydrazyl (DPPH) method. Proximate analysis showed an average content of moisture, ash, fat, crude f ber, proteins, and reducing sugars of 10.00, 1.87, 41.09, 2.83, 2.30 and 2.70 g / 100 g aguaje pulp weight, respectively. The content of unsaturated fatty acids was 71.90%, where the oleic acid was the most abundant (68.69%), followed by linoleic acid (2.05%), a-linolenic acid (0.87%) and palmitoleic acid (0.29%). The oil extract of aguaje pulp also showed a 25.52% of saturated fatty acids, where the palmitic acid was the most abundant (21.27%), followed by stearic acid (4.19%) and myristic acid (0.06%). Moreover, the antioxidant activity assay showed an IC50 of 31.77 ppm, indicating a relatively high antioxidant capacity
