The present work has the finality of recognizing acceptance degree of corn flour as a medium to introduce Moringa oleifera plant into the diet of vulnerable population in the city of Cartagena de Indias. The methodology used was sensorial analysis using ANOVA with a 9 points hedonic scale in two different presentations of corn flour fortified with 20% of Moringa oleifera powder: colada and corn cake, in a sample of 32 including children, youngsters and adults in marginal neighborhoods in the city. Three variables were assessed: color, mouth feel and flavor. When it comes to corn cake medium color (4.16) and mouth feel (3.56), would verbally mean I just like it; nevertheless, for flavor (3.38) would mean I moderately like it. For colada (a hot beverage popular in Latin America) color obtained a medium of (2.69) (I moderately like it) meanwhile, for mouth feel (2.09) and flavor (1.91) a verbal equivalent of (I like it very much) was obtained. On comparing the two presentations given a meaningful difference between means indicate a larger acceptance for colada of corn flour fortified with Moringa oleifera.
