Background. The project 212 "community dining rooms" aims to provide balanced daily food supplements to vulnerable population of Bogota, in order to improve their nutritional status. Objective. To determine compliance with good manufacturing practices GMP through the analysis of the assessments made by the interventoria during their first year of implementation, in order to demonstrate the improvement in the levels of microbiological quality of the supplement provided. Materials and methods. The universe was represented by 167 community dining rooms in 19 localities of Bogotá, 3871 microbiological analysis of food samples (taken as food safety indicator), surfaces, atmospheres and manipulators (as GMP indicators) and water (water quality indicator), among June and October 2006, and 489 records obtained sanitary assessments in April, July, September and November 2006. Results. Canteens reached higher levels of performance for the categories of health and hygiene evaluation after the technical interventions. Microbiological indicators showed improvement represented by an increase in acceptance rates by 7, 20 and 28% for safety, water and BPM, respectively. The mean acceptability for Microbiology indicators for the month of June was 0,78 (with a scatter between 0,72 and 0,91) for October averaged 0.88 (with a smaller dispersion of 0,87 to 0,93). Conclusions. As they were implemented preventive and corrective actions established by the interventoria in canteens increased and sanitary conditions.
