The extraction process of passion fruit seed oil (Passiflora edulis Sims.) from waste generated from agro-industrial fruit processing was evaluated. The oil was obtained by supercritical fluid extraction technology using CO2 as a solvent. Different conditions of pressure and temperature were evaluated against the oil yield using a factorial design of experiments 22 with 4 central points. The physicochemical characteristics were determined for vegetable oils such as density and refractive values, saponification, iodine, peroxide and acidity were determined. The fatty acids was measured by gas chromatography, and sterols using gas chromatography-mass spectrometry, to determine the antioxidant activity of the oil by DPPH* method. The best conditions for passion fruit oil extraction were 350 bar and 60°C, in which a yield of 15.7% oil was obtained. The physico-chemical characterization shows that the oil meets the quality standards set for edible oils. The passion fruit seed oil is rich in saturated and unsaturated fatty acids, and contains a high proportion of linoleic acid (67.0%), followed by oleic (16.6%) and palmitic acids (14.5%). To a lesser extent, stearic and linolenic acids were detected. Chromatographic analysis revealed the presence of minor components found in the oil was β-sitosterol, stigmasterol, campesterol, lanosterol and squalene. The antioxidant activity was demonstrated with an EC50 value of 433.40 g oil/g DPPH* and antiradical efficiency 2.31E-03.
