The fishing industry represents a chain of production of great importance in the world economy, without however; large quantities of by-products are generated annually, resulting in economic losses and negative impacts on the environment. However, the waste can be used efficiently for multiple purposes: improve the functional properties of foods, such as powerful antioxidants, protect the health of people and provide essential nutrients. Hydrolysis technology allows the integral processing of the fish in order to achieve these purposes. This has aroused the interest of researchers and industries around the world through the study of new species, processes and technologies leading to materialize into products with market potential. The aim of this review is to present production, benefits and new developments on fish hydrolysates from a technological, nutritional and functional appearance.
