This article is a preliminary study about the semiotic analysis of cuisine by means of the cultural identity. The gastronomic textuality is an identitary marker that focuses its attention on migrants' 'eating' and characterizes the improvisation palimpsest as a generating logic of a new culinary text where formal and taste similarities oscillate indiscriminately.
