Abstract

A ripening study was carried out involving two promising clones in the environmental conditions found at Sabana de Bogotá (reduced rainfall, 16,35 oC and 65,1% HR) for selecting the best pineapple guava fruit (Acca sellowiana Berg) for exportation. The 8-4 clone was evaluated for 14 d and the 41 (Quimba) clone for 18 d. Respiratory intensity, total soluble solids, titratable total acidity, pH and weightloss were determined every day. Respiratory intensity was determined by gas chromatography; sugars were determined every 2 d by HPLC. Both clones exhibited a climactic respiration pattern and fructose, sucrose and glucose were the most abundant sugars during ripening. Although no significant statistical differences were observed between clones, the 8-4 clone had larger weight loss and the 41 (Quimba) clone conserved its biochemical characteristics for a longer time.
