The influence and contribution of functional leaves and fruit epicarp to 'Hartón' plantain fruit physical properties and quality during bunch development were studied in the department of Córdoba, Colombia. Ten treatments with three repetitions each, consisting in differential covering of leaf and inflorescence thirds, were set within a completely randomized design. The number of functional leaves working during the bunch filling period significantly affected fruit weight, length and thickness, whereas the filling period itself remained unaffected. Regarding fruit ripening, total soluble solid concentration (°Brix) in pulp was significantly affected, whereas starch content was not.
