To analyze the state of health within the armies fighting the Wars of Independence, it is important to examine food they consumed rather than just diseases and sanitary conditions. This article examines the issue of sustenance by exploring primary sources, especially military descriptions and diaries, in three different geographic and ecological regions and moments: the llanos of Venezuela, the Siege of Cartagena, and the march across the Andean cordillera during the Campaign of Boyacá in 1819. These different environments determined the provision, access and consumption of food by the warring factions.
