Abstract

LLANO, Fabián Andrés. Gastronomy, Tourism and Territorial Potentials: The Mining and Salting Dish as a basis for Culinary Tourism in Nemocón. Cuad. Geogr. Rev. Colomb. Geogr. [online]. 2017, vol.26, n.2, pp.295-306. ISSN 0121-215X.  https://doi.org/10.15446/rcdg.v26n2.59280.

The tourism promotion of a municipality like Nemocón recognizes its Andean gastronomy. This acceptance of the culinary heritage of a place like Nemocón serves as reference for the construction of the salt route based on culinary tourism. Within the framework of human geography, the study used a methodological approach that involved oral history as a research strategy, privileging the narrative in the rescue of cultural elements.

Keywords : human geography; Nemocón; gastronomic heritage; local food products; food tourism; experiential tourism.
