A summary is presented of the main features about oral iron absorption (iron sources and pickup), and its functions in the body, focusing in the present tendency to use iron complexes formed mainly with ligands such as saccharides, amino acids and carboxylic acids of low molecular weight, for oral therapy in patients with iron deficiencies. These complexes or quelates increase the iron bio availability and reduce the adverse effects of inorganic salts in the gastrointestinal system. Also, this article describes, the more relevant findings about synthesis and characterization of this kind of compounds useful as s food supplement. Finally, some interactions between iron and other compounds of the daily diet are explained.
