Various organizations have expressed the need to have a technology-based system to monitor and manage the traceability of cocoa during the chocolate manufacturing process. Therefore, the objective of this study was to develop an RFID system under IoT architecture, which allows traceability of cocoa packages within the chocolate production process through the use of Time Series. To do this, a device capable of registering and consulting the information related to each package of cocoa at the time it is received and stored in the collection center was designed through a client/server architecture and RFID (Radio Frequency IDentification). Additionally, it incorporates a web development with the capacity to carry out the process of analysis and modeling of environmental conditions during cocoa storage supported by the use of the Holt-Winters model. The low-cost system developed made it possible to efficiently record, control and monitor processes related to cocoa traceability in storage management, in terms of: moisture content, weight, impurities, defective beans, well-fermented beans, among others. Additionally, the proposed Holt-Winters model can be considered as a prediction tool for temperature and relative humidity, allowing to improve the cocoa traceability process, reaching adjustment levels higher than 0.9, accompanied by a very low standard error. estimation and with a confidence level of 95 %.
