Chitin is on earth the most abundant natural polysaccharide after cellulose and can be obtained from the shell of arthropods. The increasing production of farmed shrimps has led to a greater amount of waste, which poses environmental problems generated by the huge amounts of shells which are left as garbage. The aim of this research was to assess a quantitative comparison of chitin present in the shell of arthropods using characterization techniques such as infrared spectroscopy, potentiometric titration and the Kjeldahl method, which makes it possible to assess the quality of chitosan obtained. The IR spectra showed bands consistent with the standard chitin and the chitin extracted from crab and shrimp shells with respect to the signals appearing at 3258cm-1 to OH groups, at 2877cm-1 for methyl groups, at 1654cm-1 to 1069cm-1 vibration Amide I, II, and III and aromatic amines and 1010cm-1 to 894cm-1 of the OH groups and α 1,4 linkages of this polysaccharide.
