Traceability is an important factor to confirm the quality of the food that reaches users, however, it has operational implications that must be addressed. this article develop a methodology based on mixed-integer nonlinear programming, which address the productive implications and costs associated with traceability, incorporating the potential cost of with-drawing the products from the market as a main component of traceability in the definition of the production lot size. The main contributions of the model are the consideration of the list of the materials of the product and the batches of the raw material with different levels of risk and costs. this research allowed to identify the capacity and risk parameters of the batches of raw material that impact on the potential cost of withdrawing products from the market and, therefore, in the definition of the production lot size.
