Abstract

This article shows the process of conception, design, and manufacture of a lasagna panel cutting machine developed for the company Pastas Comarrico S. A. S. (Barranquilla, Colombia). The machine's development process followed the company's characteristics and requirements, which, however, can be used for other companies in the same food sector. The process characteristics for the design of the equipment are low cutting torque, dry cutting process, low losses due to the bad cutting of the sheets, higher production volume than the current process, and simple design with low operating and maintenance costs. The new approach to sheet cutting is based on the automatic cutting of the sheet by subjecting it to a low bending torque with a 20-degree twist in the outward movement of the dough sheet, experimentally determined with a preliminary prototype.
