Abstract

Mucuna seeds originated from India have been widespread in tropical and subtropical regions due to their easy adaptation. These seeds have potential as a protein supplement to improve ruminant nutrition if the adverse effect of anti-nutritive factors such as L-Dopa, tannins, phenols, phytic acid and protein inhibitors can be diminished. Moreover, these legumes have low fat quantity and high content of fiber, minerals and essential amino acids. The intent of this paper is to review the current knowledge on nutritional and antinutrients composition of Mucuna beans.
