Abstract

Extracts from ginger rhizomes (Zingiber officinale) were obtained by supercritical fluid extraction- SFE, with CO2 at different conditions of temperature and pressure. Additionally, lipophilic extracts were obtained by soxhlet extraction. The extracts were analyzed by gas chromatography-mass spectrometry (GC-MS) and there were determined the respective extraction yields. With SFE was possible to obtain solvent free extracts, they were enriched with aroma impact compounds and with important biological activity compounds, reaching an extract yield of 1.51% to 17.9 MPa and 40 ºC. Over thirty components present in the extracts were identified by GC-MS.
