Industrial production operations generate waste that impacts on soils, water and atmosphere. In Brazil, industrial operation of production of orange juice, frozen and concentrated (FCOJ) have impact upon the environment due to millions of tons of waste and by-products generated. The objective of this research is to propose a methodological framework to evaluate the environmental performance of the disposal of waste and by-products generated in the industrial stage of FCOJ production. A construct based on 37 residues/by-products from FCOJ production, weighted through the analytic hierarchy process method, was elaborated. The main contributions of the proposal are: specificities of the productive process have been considered; it is based on the waste and by-products generated; it weighs the impact on water, soil and atmosphere for each waste and by-product, according its composition and quantity generated; it shows the adequate shedding for each element considered.
