Abstract

Food-borne diseases are a serious impairment to the health of consumers and the image of restaurants. For this reason, this study aimed to manage the sanitary quality and food safety in a buffet restaurant of the city of Havana, Cuba. To this end, we assessed the compliance with good food manufacturing practices by applying various tools, such as the Sanitary Assessment Guide for Tourist Accommodation Establishments and the Sanitary Profile. In addition, we used surveys in order to determine the degree of knowledge of food handlers and members of cleaning and disinfection brigades on issues related to hygiene and food handling. From this diagnosis, 55% of the found deficiencies were resolved and an improvêment in the knowledge about hygiene and food handling of the staff was achieved.
