This paper shows examples of recording and partial archaeological survey of two Mexican wheat mills in the central plateau and the archaeological evidence following the TICCIH-Mexico methodology to register and protect these agroindustrial historical sites. We make a short historical description of each site and then an architectural registration in order to rescue and protect as according to TICCIH rules.
