The Whey protein concentrated (WPC) has functional properties suitable for developing films biopreservantes. Thanks to the functional properties of its components, was feasible the incorporation of lactic acid bacteria (LAB) producing substances type bacteriocins (STB) and thus achieve and effective control Listeria monocytogenes to be applied on smoked salmon. The conditions for the formation of the film were: CPS 12% w/v, glycerol 18% v/v, pH of film-forming solution 7.0 and 8.0, and dried at 30°C for 16 hours. The study of inhibitory activity of the film incorporated with lactic strains was evaluated using the diffusion method against a lawn of L. monocytogenes and by plate counting, getting the combination BAL-A + B, increases the activity of controlling L. monocytogenes achieving 2.1 log units to reduce the growth of this pathogen under refrigeration for 15 days.
