Abstract

Cocoa is a product with great advantages derived from the necessity to replace the internal demand and to increase the chocolate factory product exports; however, the low productivity of the hybrid plantations of cocoa, has affected the economic development of the sector, thus, the investigation in the country is focused in the search of productive, resistant materials to diseases and with acceptable qualities of grain in national and international markets. In this project two universal materials, a Creole cocoa and nine clon materials were evaluated as far as their physical and chemical characteristics. It is anticipated that these to serve like being differentiating parameters. The main macronutrients (fat and fatty acid composition, protein, ash and fiber) and the microelements potassium, magnesium, phosphorus, iron and zinc were determined, in addition to the physical parameters husk, pH and acidity. It was found that the twelve materials present significant differences to each other, but emphasize the materials Selección Colombia Corpoica (SCC41) and Fedecacao El Carmen (FEC-2) to present high levels of all the evaluated variables. With respect to the content of micronutrients, it is confirmed that the cocoa is significant source of potassium, magnesium and phosphorus, but is poor in iron and zinc.
