Colombian agricultural sector requires integraed agro-industrial sector to add value to their products and waste generated. Agricultural and agroindustrial use waste as raw materials for secondary metabolites is a subject of interest in research and seeks to respond to the use or destination of such waste through the development of technologies applicable to the Colombian environment. We evaluated peel, seed and pulp of avocado varieties Booth8, Trinidad and Papelillo in states of physiological maturity (MF) and consumption (MC). Characterization made bromatological fiber as soluble carbohydrates (CHOS), lignin (LG), cellulose and hemicellulose (CEL and HEMICEL) and crude fiber (CF) by (Tappi Methods, 1993, 1998), AOAC, 2001. The results were analyzed by ANOVA (P <0,05) using SAS V9.1. CHOS in the two stages of maturity and the three varieties ranged between from 12-38% peel, 20-35% pulp and 17-35% seed; CEL-HEMICEL 8-50% peel, 7-26% pulp, 1- 5% seed, which can be a useful adjunct to biotechnological processes. The pulp of the three varieties has high nutritional value for their contents of protein, fiber and minerals. The composition of the shell and seed could be important for animal dietary supplements or recovery of solis for agricultural production
