Abstract

The aim of the investigation project was to develop an edible coating starch from potato (Solanumtuberosum L), aloe vera (Aloe barbadensis Miller) and carnauba wax (Coperniciacerifera) and evaluate it in guava (Psidiumguajava) to prolong life at room temperature. The coating application was made by fruit immersion in each of the respective treatments for 30 seconds, and dried for 5 minutes at 35oC.Guavas were stored in conditions of the city of Popayán, Departamento de Cauca, Colombia(1737 meters above sea level, 19ºC and 77,75% RH) on stainless steel trays previously washed and disinfected. 4 treatments were developed: the control sample without starch and the coatings with 2, 3 and 4% starch respectively. Was evaluated the weight loss, respiration rate, firmness, vitamin C content and the predominant acid, finding that treatment 4 showed a favorable effect against weight loss, reduced respiratory rate, firmness and maintaining a significant content of vitamin C and fruit organic acid after 10 days of storage as compared with the control sample.
