Abstract

This study evaluated the process of enzymatic modification of cassava starch for its application in the development of biodegradable flexible films. For this purpose, the temperature, enzymatic concentration and reaction time were evaluated to get dextrose equivalent (DE) between 10 and 25%. It evaluated the effect of modification degree over mechanical properties of flexible films of starch with different DE (7, 10, 13, 17, 21%). At DE values lower than 13%, the films exhibited increased stress compared to the native starch films, while the strain decreased for these same levels. On the other hand, to DE upper than 13%, the films exhibited similar stress and strain properties to the ones for native starch films, so these could be the most suitable among other films evaluated, taking into account the possible changes that could lead to overcome the limitations of the use of native starch
