Abstract

The chontaduro is one of the most important exotic fruits to Colombia because of its significant contribution in nutrients as it has 8822 hectares in the departments of Valle del Cauca, Cauca and Putumayo. Changes in two varieties of peach fruit (red and yellow) during the postharvest period under ambient conditions from the municipality of El Tambo (Cauca) to provide guidance for buying and selling help in marketing were evaluated. Weight loss, amplitude, length and pulp-shell ratio seed were directly proportional to water loss in ripening, however, the fat content and total soluble solids were inversely. Firmness allowed differentiation of overripe fruit, fresh fruit, to show considerable variation in resistance to penetration from 39,5358N to 23,6431N in red variety and 19,6353N to 11,7463N in yellow variety. According to the behavior observed in the concentration of O2 and CO2, as well as the physical and chemical changes in the fruit of peach, we can say that this product is climacteric, indicating that the time to market is short as it continues I matured even after being harvested
