The flora of a place determines beekeeping and influences nutritional and organoleptic characteristics of honey. To do this, we identified and classified taxonomically floral species with potential bee apiary of the University of Nariño, and the nutritional composition of honey produced was determined. Radial transect methodology and assessment matrix used natural resources; also get information from the community. The bee flora variables and determination of food resources (nectar, pollen nectar/pollen) were analyzed using descriptive statistics and Pearson correlation between the presence and participation of the plants. Also, changes were determined in the composition of honey at different times, using a completely randomized design. The most important plant species identified by the binomial classification were Brassica rapa, Taraxacumofficinale, Trifoliumrepens, Fragariachiloensis, Eucalyptus globulus. The composition of honey did not show significance (p>0.05) at different times of the year; however, highlights the average values of total solids: 83,45 g/100 g, protein: 0,40 g/100 g, reducing sugar: 69,1 g/100 g Calcium 5,5 mg/100 g, pH 3,8 and 77,9° Brix. The botanical families more interest in beekeeping, Fabaceae and Asteraceae were getting honey polyfloral acceptable nutritional composition.
