Abstract

The limited information published about the significance of the intake of phytic acid which could decrease the bioavailability of proteins and minerals, makes necessary to initiate a study to identify and quantify it in the potato that is the fourth most consumed food worldwide and is an ingredient of the infant foods from 4 months old. The main of this research was to identify and quantify the phytic acid in native Huagalina potato from La Libertad Region, cultivated with organic fertilizers and compare it with the commercial potato content. For the extraction of phytate, NaOH-EDTA was used and the spectra were acquired by 31P NMR. The concentration of the external H3PO4 standard was calculated from the concentration of the internal standard Na2HPO4 at 14,06 mM and the phytic acid standard was prepared in an analogous manner. In these spectra, in addition to the 31P signals of phytic acid, the phosphate was observed at 5,50 ppm and glycerol phosphate was observed at 4,42 ppm. These chemical shifts are in accordance with those reported in the literature, so the areas below these signals were used to quantify phytate in the two potato extracts studied. In particular, it highlighted the high phytic acid content of the pulp of the commercial potato (0,078%) compare with the Huagalina pulp (0,035%).
