Abstract

The agraz (Vaccinium meridionale Swartz) is a wild species that grows spontaneously in the high Andean area of countries like Colombia and is considered a fruit with increasing demand. The objective was to carry out a study of the growth and development of the berry fruit under conditions of the cold climate. Fruits of adult bushes of agraz were selected in Chiquinquirá (Colombia) municipality; from day 30 after anthesis to fruit harvest, 7 periodic samplings were made, measurements of physicochemical parameters were made. It was determined that from flowering to harvest the fruit there was 124 days and 817,5 degrees heat day. The ripe berry fruits had an equatorial and polar diameter of 9,8 ± 0,11 mm and 10,3 ± 0,14 mm respectively; the fresh weight and dry weight of the fruit showed a simple sigmoid behavior, adjusting to a logistic-type growth model. Total soluble solids, total acidity and color index increased as a function of development. Respiration slowed although it peaked in mid-development. At harvest, there were average soluble solids values of 13,27 ± 1,17 ºBrix, color index of 104,49 ± 13,23, total acidity of 2,39 ± 0.05 % and respiratory rate of 33,48 ± 8,43 mg CO2 kg-1 h-1.
