Abstract Introduction. The crossed contamination events can, specifically in the deboning area, affect the safety of a previously sanitized carcass, and it can be even worse because later, in the cutting process, there are no stages that include microbial destruction to eliminate the contamination the product could have had during this phase. Therefore, it is important to implement strategies to control crossed contaminations in the area. Objective. Establish a procedure for the monitoring and the closing of microbiological nonconformities in environments, surfaces and manipulators in the deboning area. Materials and methods. Tolerance intervals were implemented based on the analysis of total coliforms during deboning. The conditions that are transversal in the process were characterized by the use of a checklist; flowcharts to close microbiological nonconformities were designed and an improvement plan to prevent contamination with coliforms during deboning was developed. Results. The most strict tolerance limits were established in environments with measures between 2 and 4 CFU of coliforms, while the application of the check list showed failures in the cleaning and the disinfection of surfaces and a lack of knowledge about the disinfectant concentrations used. Conclusion. Crossed contamination in the deboning area was mainly due to aspects related to the correct application of the cleaning and disinfection processes.
