The fruit of the cape gooseberry develops and remains within a calyx. Various aspects related to the role of the calyx in cape gooseberry fruit physiology are unknown. The objective was to determine the role of the calyx in the postharvest behavior of cape gooseberry fruit, ecotype Colombia. The experimental design was completely randomized with two treatments: the first corresponded to fruit with calyx and the second contained fruit without calyx. The fruits were harvested in the municipality of Ventaquemada (department of Boyaca, Colombia), at maturity grade 3, according to the Icontec standard NTC 4580. Once harvested, the fruits were brought to the laboratory and placed in storage chambers (16±1°C and 80% relative humidity) for 22 days. The pshysicochemical parameters were measured periodically. A positive effect from the calyx was found during the storage of the cape gooseberry fruits. With statistical differences, the ethylene concentration produced by the fruit with calyx was minor. These same fruits showed lower increases in the total soluble solids, maturity ratio and color index. The fruit with calyx showed more firmness, total titratable acidity and lower weight loss as compared to fruit without calyx. This demonstrates the great importance of keeping the calyx attached to cape gooseberry fruits during the postharvest.
