The sunflower is an Asteraceae with high potential for plant cuttings. It is exposed to widely fluctuating environmental conditions, such as light, temperature, water and nutrients. These conditions can cause stress on the plants. Stress is defined as an external factor that exerts a negative influence on a plant. The sunflower is resistant to drought and low and high temperatures. The effects of stress depend on the intensity and the current phenological stage. Fluorescence can be used as a tool to obtain information about the influence of stress on the physiological state of the photosynthetic apparatus of plants and its response can be indicative of its damage or alteration. This review was done in order to bring together a selection of scientific research data on different types of stress evaluated in Helianthus annuus and on how fluorescence has been used as an indicator of stress, thereby contributing to the expansion of information available for this important species.
