In this study, some characteristics of the physical behavior of the macroemulsion with astaxanthin oleoresin that are in close relationship with stability were determined. One of them was the viscosity at 5, 10, 20 and 30°C. Another, corresponded to observing the size variation of the micelles, observed under the microscope for 8 days and finally, the color was determined in CIEL*a*b* system for 34 days. The results showed that the macroemulsion behaved like a shear thinning fluid up to 20°C, becoming a shear thickening fluid at 30° C. In addition, the macroemulsion presented stability in the color as time elapsed; observing some slight variations that may be due to flocculation and coalescence. Both affect the viscosity at low temperatures.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[Resumen Las macroemulsiones facilitan la solubilización, estabilidad, bioaccesibilidad y bioactividad de compuestos con baja solubilidad, como es el caso de la emulsión desarrollada a partir de oleorresina de astaxantina (10%). En este trabajo se determinaron algunas características del comportamiento físico de la macroemulsión con oleorresina de astaxantina que están en estrecha relación con la estabilidad. Una de ellas fue la viscosidad a 5, 10, 20 y 30°C. Otra correspondió a observar la variación de tamaños de las micelas, observándose al microscopio por 8 días y por último, se determinó el color en el sistema CIEL*a*b* durante 34 días. Los resultados arrojaron que la macroemulsión se comportó como un fluido pseudoplástico hasta 20°C, pasando a ser un fluido dilatante a 30°C. Además, la macroemulsión presentó estabilidad en el color a medida que el tiempo transcurrió; observándose en algunas ligeras variaciones que pueden ser debidas a la floculación y coalescencia. Ambos, afectan a la viscosidad en temperaturas bajas.]]></p></abstract>
