La metodología empleada en la investigación fue fundamentalmente cualitativa, e incluye observación participante, entrevistas en profundidad a informantes clave, revisión bibliográfica y análisis de contenidos virtuales de las experiencias seleccionadas. Los resultados obtenidos indican que los alimentos intercambiados en estos circuitos son imbuidos de características distintivas, tales como su producción -basada en el empleo de prácticas respetuosas del medio ambiente o a cargo de sujetos pertenecientes a la economía social-, y la recurrencia a canales de comercialización que aspiran a una mayor cercanía al consumidor -circuitos cortos-. Sin embargo, el análisis revela que estos difieren en un aspecto clave: los criterios empleados para la definición de precios, que configuran el posicionamiento de tales circuitos frente al sistema alimentario convencional. También indica superposiciones con elementos y actores propios de dicho sistema, no llegando a afirmarse como un modelo unívoco de abastecimiento diferenciado. <abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract The article analyzes the network of actors and the construction of the market in alternative food circuits of the metropolitan area of Buenos Aires (AMBA), as well as the devices employed, focusing on dairy products whose technological and regulatory characteristics hinder their insertion in selling channels that differ from the predominant model of food supply. The methodology used in the research was fundamentally qualitative, including participant observation, in-depth interviews with key informants, literature review, and analysis of documents and virtual content of the selected experiences. The results obtained reveal that the dairy items exchanged in these circuits are permeated with distinctive characteristics, as its production based on the use of environmentally friendly practices or by actors belonging to the social economy, and the employ of marketing channels aimed at achieving a greater proximity to the consumer (short food supply circuits). However, the analysis reveals that they differ in a fundamental aspect -the criteria for the definition of prices- that is related to their positioning regarding the conventional food system. It also indicates overlaps with elements and actors of this system, not being able to assert itself as an univocal model of differentiated food supply. <abstract abstract-type="short" xml:lang="pt"><p><![CDATA[Resumo O artigo analisa a rede de atores e como o mercado é construído em circuitos alimentares alternativos da região metropolitana de Buenos Aires (AMBA), bem como os dispositivos utilizados, tendo como eixo os produtos lácteos, cujas características tecnológicas e regulatórias dificultam sua inserção em arranjos de comercialização que diferem do modelo predominante de fornecimento de alimentos. A metodologia utilizada na pesquisa foi fundamentalmente qualitativa, contemplando observação participante, entrevistas aprofundadas com informantes-chave, revisão da bibliografia e análise de conteúdos virtuais das experiências analisadas. Os resultados obtidos indicam que os alimentos lácteos trocados nesses circuitos estão imbuídos de características distintas, como sua produção baseada no uso de práticas ambientalmente corretas ou por sujeitos pertencentes à economia social, e o uso de canais de venda que aspiram a uma maior proximidade com o consumidor (circuitos curtos). No entanto, a análise revela que estes diferem em um aspecto-chaveos critérios utilizados para a definição dos preços-que faz a seu posicionamento em relação ao sistema alimentar convencional. Também indica sobreposições com elementos e atores desse sistema, não sendo capaz de se afirmar como um modelo unívoco de fornecimento diferenciado.
