El objetivo fue realizar un estudio del crecimiento y desarrollo del fruto de agraz bajo condiciones de clima frío. Se seleccionaron frutos de arbustos adultos de agraz en Chiquinquirá (Colombia); desde el día 30 después de antesis hasta la cosecha, se hicieron 7 muestreos periódicos, se realizaron mediciones de parámetros fisicoquímicos. Se determinó que desde la floración hasta la cosecha el fruto tardó 124 días y 817,5 grados calor día. Los frutos de agraz en estado maduro presentaron un diámetro ecuatorial y polar de 9,8 ± 0,11 mm y 10,3 ± 0,14 mm respectivamente; el peso fresco y peso seco del fruto, presentaron un comportamiento sigmoide simple, ajustándose a un modelo de crecimiento tipo logístico. Los sólidos solubles totales, la acidez total y el índice de color aumentaron en función del desarrollo. La respiración disminuyó, aunque tuvo un pico en la mitad del desarrollo. En la cosecha se presentaron valores medios de sólidos solubles de 13,27 ± 1,17 ºBrix, índice de color de 104,49 ± 13,23, acidez total de 2,39 ± 0,05 % y tasa respiratoria de 33,48 ± 8,43 mg CO2 kg-1 h-1.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The agraz (Vaccinium meridionale Swartz) is a wild species that grows spontaneously in the high Andean area of countries like Colombia and is considered a fruit with increasing demand. The objective was to carry out a study of the growth and development of the berry fruit under conditions of the cold climate. Fruits of adult bushes of agraz were selected in Chiquinquirá (Colombia) municipality; from day 30 after anthesis to fruit harvest, 7 periodic samplings were made, measurements of physicochemical parameters were made. It was determined that from flowering to harvest the fruit there was 124 days and 817,5 degrees heat day. The ripe berry fruits had an equatorial and polar diameter of 9,8 ± 0,11 mm and 10,3 ± 0,14 mm respectively; the fresh weight and dry weight of the fruit showed a simple sigmoid behavior, adjusting to a logistic-type growth model. Total soluble solids, total acidity and color index increased as a function of development. Respiration slowed although it peaked in mid-development.
