Estos emergen de prácticas productivas de precisión, al tiempo que forman parte de tradiciones y patrimonios rurales de campesinos y artesanos de Europa y otras regiones con historias y vocaciones productivas delimitadas. Este trabajo tiene como objetivo dar cuenta de distintas experiencias y nociones sobre los conceptos mencionados, haciendo hincapié en sus procesos de trasformación y resignificación según los contextos de producción, comercialización y consumo en donde se han implementado. La metodología revisa documentos que discuten los conceptos, tanto en los sitios donde han tenido origen como en otras latitudes donde se han trabajado de forma aplicada o crítica, con lo cual tratan una diversidad de planteamientos. El texto propone una reflexión sobre los insumos que el Terroir y las Denominaciones brindan al desarrollo de oportunidades en escenarios productivos rurales delimitados, como los que se encuentran en regiones emergentes de América Latina. Además, concluye con una revisión de elementos que van desde las condiciones físicas, orgánicas y bioclimáticas de estas vocaciones hasta los elementos sensitivos, territoriales, culturales y populares que también las conforman.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract Specialized local production in agrarian societies can be understood in the dynamics of the places where it is developed, based on two concepts: Appellations of Origin and Terroir. These concepts emerge from precision production practices, while being part of rural traditions and heritage of peasants and artisans in Europe and other regions with delimited productive histories and vocations. This paper aims to give an account of different experiences and notions related to these concepts, emphasizing their transformation and resignification processes according to the contexts of production, marketing and consumption where they have been implemented. The methodology reviews documents that discuss the concepts, both in the places where they have originated and in other latitudes where these have been worked in an applied or critical way, thus dealing with a diversity of approaches. The paper proposes a reflection on the inputs that the Terroir and the Appellations provide for the development of opportunities in rural production scenarios, such as those found in emerging regions of Latin America. In addition, it concludes with a review of elements ranging from the physical, organic and bioclimatic conditions of these vocations, to the sensitive, territorial, cultural and popular elements that also shape them.]]></p></abstract>

Estes emergem de práticas de produção de precisão, enquanto fazem parte das tradições e patrimônios rurais de camponeses e artesãos da Europa e de outras regiões com histórias e vocações produtivas definidas. Este trabalho pretende dar conta de diferentes experiências e noções sobre os conceitos mencionados, enfatizando seus processos de transformação e ressignificação de acordo com os contextos de produção, comercialização e consumo em que foram implementados.
