El propósito de la investigación fue optimizar y modelar el proceso de deshidratado de Musa paradisiaca L. a través de un secador solar artesanal. Para el deshidratado se obtuvieron 10 kg de muestra de plátano verde en el mercado local por semana, se realizaron cortes en forma longitudinal de 0.45±0.05cm para colocar en cada una de las bandejas del deshidratador solar con peso promedio de 1178.03 g por día, durante 15 días, diariamente se tomó la masa inicial al producto fresco con una balanza analítica, se pesó en tres intervalos, entre las 8:30am - 5:00pm, con la finalidad de determinar la variación de sus masas. El resultado indica que existe relación significativa entre las variables con un nivel de confianza del 95.0 %. La variación explicada del modelo es 99.4683 % de la variabilidad en humedad pérdida en función de las variables independientes. La confiabilidad del modelo para describir el comportamiento del secador solar y el estado final del producto se restringe a ciertas variables tales como la humedad del producto, la temperatura, la humedad relativa del aire interior, sobre las cuales se puede tener certeza a partir del procedimiento de validación realizado.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[Abstract  Introduction: Currently, between 15 and 45 % of the harvested products are lost, there is a diversity of post-harvest technologies for the preservation of perishable foods. The purpose of this research was to optimize and model the dehydration process of Musa paradisiaca through an artisanal solar dryer. For dehydration, 10 kg of green banana samples were obtained in the local market per week, longitudinal cuts of 0.45 ± 0.05cm were made to place in each of the trays of the solar dehydrator with an average weight of 1178.03 g per day. During 15 days, the initial mass of the fresh product was taken daily with an analytical balance, it was weighed in three intervals, between 8:30 am-5:00 pm, in order to determine the variation of its masses. The result indicates that there is a significant relationship between the variables with a confidence level of 95.0 %. The explained variation of the model is 99.4683 % of the variability in moisture loss as a function of the independent variables. The reliability of the model to describe the behavior of the solar dryer and the final state of the product is restricted to certain variables such as the humidity of the product, the temperature, the relative humidity of the indoor air, about which it is possible to be certain from the procedure. validation performed.]]></p></abstract>
<abstract abstract-type="short" xml:lang="pt"><p><![CDATA[Resumo  Introdução:  Atualmente, cerca de 15 a 45 % dos produtos colhidos são perdidos, existe uma diversidade de tecnologias de pós-colheita para a preservação de alimentos perecíveis. O objetivo da pesquisa foi otimizar e modelar o processo de desidratação de Musa paradisiaca por meio de um secador solar artesanal. Para a desidratação, foram obtidos no mercado local 10 kg de amostra de banana verde por semana, foram feitos cortes longitudinais de 0,45 ± 0,05cm para colocar em cada uma das bandejas do desidratador solar com peso médio de 1178,03 g por dia, durante 15 dias, a massa inicial do produto fresco foi retirada diariamente com balança analítica, sendo pesada em três intervalos, entre 8h30 e 17h00, a fim de determinar a variação de suas massas. O resultado indica que existe relação significativa entre as variáveis com nível de confiança de 95,0 %. A variação explicada do modelo é de 99,4683 % da variabilidade da perda de umidade em função das variáveis independentes. A confiabilidade do modelo para descrever o comportamento do secador solar e o estado final do produto é restrita a certas variáveis como a umidade do produto, a temperatura, a umidade relativa do ar interior, sobre as quais é possível certifique-se do procedimento da validação realizada.]]></p></abstract>
