Optou-se por apresentar uma breve trajetória da comida de rua no espaço urbano da Bahia. Após essa abordagem, discute-se a comida do lugar como R-existência na cozinha de rua das cidades de Ilhéus e Itabuna. Elegeram-se para análise três elementos da culinária baiana, a saber, o mingau, o acarajé e a cocada. Utilizou-se como recurso metodológico a pesquisa bibliográfica, entrevistas com os(as) trabalhadores(as) da comida de rua e aos consumidores. O conceito de R-existência se aproxima da temática da comida de rua na medida que os trabalhadores permanecem na rua e, r-existem ao apagamento histórico de sua atividade. A R-existência na comida de rua se deve ao fato dessa alimentação estar alicerçada na identidade da cultura baiana, resultante da contribuição indígena, africana e portuguesa. Essa comida resguarda saberes e fazeres transmitidos de geração a geração, que consolidam sua R-existência a medida que não desaparecem com o tempo, mas se solidifica.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT The objective of this article is to relate street food to the concept of «Resistance-existence» (r-existence) The authors present a brief history of street food in the urban space of Bahia, Brazil. After this approach, local food is discussed as r-existence in the street cuisine of the cities of Ilhéus and Itabuna. Three elements of Bahian cuisine were chosen for analysis: papilla, acarajé, and cocada. The authors used bibliographic research and interviews with street food workers and consumers as a methodological resource. The concept of r-existence addresses the issue of street food insofar as workers remain on the street and resist the historical erasure of their activity. The r-existence in street food is due to the fact that this food is based on the identity of Bahian culture, resulting from the indigenous, African, and Portuguese contributions. This food preserves knowledge and practices passed down from generation to generation, which consolidates its r-existence, as it does not disappear over time but, rather, becomes stronger.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN El objetivo de este artículo es relacionar la comida callejera con el concepto de «R-existencia». Se decidió presentar una breve trayectoria de la comida callejera en el espacio urbano de Bahía. Después de este acercamiento, la comida local es discutida como R-existencia en la cocina callejera de las ciudades de Ilhéus e Itabuna. Tres elementos de la cocina bahiana fueron elegidos para el análisis, a saber, papilla, acarajé y la cocada. Se utilizó como recurso metodológico la investigación bibliográfica, entrevistas a trabajadores y consumidores de comida callejera. El concepto de R-existencia aborda el tema de la comida callejera en la medida en que los trabajadores permanecen en la calle y, r-existen al borrado histórico de su actividad. La R-existencia en la comida callejera se debe a que este alimento se fundamenta en la identidad de la cultura bahiana, resultante del aporte indígena, africano y portugués. Este alimento resguarda saberes y prácticas transmitidos de generación en generación, que consolidan su R-existencia ya que no desaparece con el tiempo, sino que se solidifica.]]></p></abstract>

On a décidé de présenter une brève trajectoire de l'alimentation de rue dans l'espace urbain de Bahia. Après cette approche, la nourriture locale est décrite comme R-existence dans la cuisine de rue des villes d'Ilhéus et Itabuna. Trois éléments de la cuisine bahianaise ont été choisis pour l'analyse, à savoir le porridge, l'acarajé et la cocada. Des recherches bibliographiques, des entretiens avec des travailleurs et des consommateurs d'alimentation de rue ont servi de ressource méthodologique. Le concept de R-existence concerne la question de l'alimentation de rue dans la mesure où les travailleurs restent dans la rue et r-existent jusqu'à l'effacement historique de leur activité. La R-existence dans l'alimentation de rue est due au fait que cette nourriture est basée sur l'identité de la culture bahianaise, issue de l'apport indigène, africain et portugais. Cet aliment protège des savoirs et des pratiques transmis de génération en génération, qui consolident sa R-existence puisqu'il ne disparaît pas avec le temps, mais se solidifie.]]></p></abstract>
