Este trabalho tem o objetivo de identificar e qualificar, por meio da ferramenta de desdobramento da função qualidade (QFD, por sua sigla em inglês), os requisitos de produto para um projeto informacional de uma cerveja artesanal, sob a visão do consumidor do Rio de Janeiro, Brasil. A pesquisa, de base exploratória, utilizou a ferramenta QFD para identificar as necessidades dos clientes e, a partir disso, traduzi-las em atributos do produto. Em termos de resultados, a pesquisa destaca o perfil dos consumidores pesquisados, ressaltando quais características devem-se priorizar no processo de desenvolvimento de uma nova cerveja artesanal. Identificou-se interesse pelo aspecto encorpado, assim como qualidade no aroma e sabor do malte. O consumidor não se mostrou tão sensível ao preço para o estilo ale e weiss. Quanto à cerveja tipo lager, o preço ainda permanece como um diferencial. Apontou-se importância na concentração do lúpulo e na concentração e qualidade do malte para os três diferentes tipos de cerveja.]]></p></abstract>
<abstract abstract-type="short" xml:lang="en"><p><![CDATA[ABSTRACT: Craft beer market is considered very promising since it has reported a steady growth in recent years and currently encourages the opening of new companies of both producers and distributors. Using the quality function deployment tool (QFD), this study aims to identify and qualify product requirements for the design of a craft beer targeted at consumers in Rio de Janeiro, Brazil. This exploratory research used the QFD tool to identify customer needs and translate them into product attributes. In terms of results, the research highlights the profile of the consumers surveyed and the characteristics that should be prioritized in the development process of a new craft beer. A particular interest in full-bodied appearance and malt aroma and flavor quality were identified. Besides, the consumer is not significantly sensitive to price in the case of ale and weiss types of beer. However, price is an important attribute for lager beer. Importance was observed in the concentration of hop compounds and in the concentration and quality of the malt for the three types of beers.]]></p></abstract>
<abstract abstract-type="short" xml:lang="es"><p><![CDATA[RESUMEN: El mercado de cervezas artesanales ha sido muy prometedor, con crecimiento en los últimos años y con fomento a la apertura de nuevas empresas, tanto productoras como distribuidoras de estos productos. El estudio tiene como objetivo identificar y calificar, por medio de la herramienta de despliegue de la función de calidad (QFD, por su sigla en inglés), los requisitos del producto para un diseño de la información de una cerveza artesanal, dirigida al consumidor de Rio de Janeiro, Brasil. La investigación exploratoria utilizó la herramienta QFD para identificar las necesidades del cliente y, desde ahí, traducirlas en atributos del producto. Los resultados de la investigación destacan el perfil de los consumidores encuestados y qué características deben priorizarse en el proceso de desarrollo de una nueva cerveza artesanal. Se identificó el interés en la apariencia de cuerpo completo, así como la calidad en el aroma y el sabor de la malta. El consumidor no se mostró tan sensible al precio para el estilo ale y weiss. Para la cerveza lager, el precio sigue siendo un diferencial. Se observó importancia en la concentración de lúpulo y en la concentración y calidad de la malta para los tres tipos de cervezas.]]></p></abstract>
<abstract abstract-type="short" xml:lang="fr"><p><![CDATA[RÉSUMÉ: Le marché de la bière artisanale a été très prometteur, en croissance ces dernières années et en encourageant l'ouverture de nouvelles sociétés, à la fois productrices et distributrices de ces produits. L'étude vise à identifier et qualifier, à travers l'outil de déploiement de fonction qualité (QFD), les exigences produit pour une conception d'information d'une bière artisanale, destinée au consommateur de Rio de Janeiro, Brésil. La recherche exploratoire a utilisé l'outil QFD pour identifier les besoins des clients et, à partir de là, les traduire en attributs de produit. En termes de résultats, la recherche met en évidence le profil des consommateurs interrogés et les caractéristiques à privilégier dans le processus de développement d'une nouvelle bière artisanale. On a identifié hntérêt pour l'aspect corsé, ainsi que pour la qualité de l'arôme et de la saveur du malt. Le consommateur n'était pas aussi sensible aux prix pour les styles ale et weiss. Pour la bière blonde, le prix reste différentiel. On a observé l'importance dans la concentration de houblon, ainsi que dans la concentration et la qualité du malt pour les trois types de bières.]]></p></abstract>
